yesterday was um.... an eventful day? i made claire saffitz's coffee coffee cake with some success...... entirely by hand. my (40 year old, passed down from grandmother) stand mixer said goodbye and i apparently have strong enough arms now that i whisked the entire cake by hand and it was delicious. i'm extremely shocked, truth be told! anyway, notes & reflections below!
overall, i like the cake. i expected to love it, but that didn't quite happen due to one thing: there was too much cinnamon involved. this may be because i weighed everything by grams except the tablespoon measures, and accidentally used my u.k measurement tbsp instead of my us one, and definitely ended with an extra 3 grams for every tablespoon. the coffee crumb was delicious, but would've been better if i did it with cold butter (i do live in tropical weather) as opposed to room temp, and kept it referigerated, because it was essentially a pie crust by the time i was ready to crumble it on. it was also way too big of a portion--i split the batter between a 9x9 and a loaf pan because i didn't have a 13x9--and i realized that the ratio on the youtube video works well for a party or to split amongst friends and family but you can definitely make a loaf (1/3 the amount) or a loaf and extra (2/3 the amount). adjusted ratios (done by grams) below! also if you don't have electric scales you get fucked over by the divisions. in that case make the original serving and give your neighbours cake. or eat it all yourself.
