cooking: banana choc-chip muffin in a mug
Jan. 5th, 2021 07:28 pmwhile i'm super fond of baking, my family do NOT like baked goods, unless they're fancy french pastries (which i've learned to make, over time). sometimes, however, you just want a really good Regular Bake like a good butter cake or a moist chocolate. i get a hankering, more often than not, for a good banana-choc chip muffin, because i ADORE the combination of banana-choc chip. i've been experimenting with how to get a more craving sized portion as opposed to baking a dozen every time, and adapted primarily from this recipe (one of my fave mug cake recipes in general)!

- 1/4 cup + 2 tablespoon all-purpose flour
- 1/4 teaspoon baking powder
- 2 tablespoon brown sugar (dark brown gives the best flavor, but can be substituted for white or light brown)
- 1/8 teaspoon kosher salt
- 1 ripe banana, mashed
- 3 tablespoon milk
- 2 tablespoon vegetable oil OR melted butter
- 1 tablespoon semi-sweet choc chips/chopped chocolate (i personally prefer semi-sweet chocolate when adding chunks to baked goods in general, but if milk is what you have, go for it!)
- mix dry ingredients together
- mix milk & banana together
- add oil/butter to dry ingredients until you get a crumbly texture
- add banana + milk mixture and mix until smooth
- add choc chips & mix
- microwave for 2 mins. if toothpick inserted doesn't come out clean, microwave at 30 sec intervals until it does.
notes:
- if you only have self-raising flour on hand, you can skip the baking powder
- if the mixture doesn't come together after adding the milk + banana mixture, try adding 1 more tbsp of milk
- if you have a particularly powerful microwave, it might take less than 2 mins to cook so you might want to start with 1 min and do 30 sec intervals till its fully cooked
